One serving has 253 kcal and 27 g protein, and at least a fifth of a woman's daily need of cobalamin (112%), choline (86%), selenium (50%), vitamin A (50%), zinc (37%) and niacin (34%). Ready in 145 minutes.

- Preparation: 15 min
- Cooking: 130 min
- Makes: 1 serving (540 g)
- Difficulty: Medium
- Diets: Dairy-free, Low carb
- Contains: beef, celery, gluten
Ingredients
- 180 g Beef tripe, raw
- 250 g Beef broth
- 40 g Carrots, raw
- 30 g Parsnips, raw
- 30 g Onions, raw
- 0.5 g Marjoram, dried
- 0.5 g Paprika
- 0.5 g Salt
- 8 g Flour, all-purpose
Method
- Clean the tripe well and cut it into thin strips.
- Simmer the tripe in the beef broth for about 1.5-2 hours, until very tender, since tripe needs long, slow cooking.
- Add the diced carrot, parsnip and onion, and simmer for a further 20 minutes until the vegetables are soft.
- Whisk the flour with a little cold water to a smooth paste and stir into the soup to lightly thicken it; simmer for 5 more minutes.
- Season generously with the marjoram, paprika and salt; marjoram is the dish's signature flavour.
- Serve hot in bowls, traditionally with rye bread.
