  • Makes: 1 serving (154 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 20 g Flour, all-purpose
  • 20 g Butter, unsalted
  • 25 g Eggs, whole, raw
  • 60 g Milk, whole
  • 20 g Sugar
  • 6 g Cornstarch
  • 0.3 g Vanilla extract
  • 3 g Sugar, powdered

Method

  1. Bring a little water and half the butter to a boil, then off the heat beat in the flour all at once to form a smooth ball of dough; cool slightly, then beat in the egg until glossy to make a choux pastry.
  2. Spread the choux pastry into 2 thin layers on lined trays and bake at 200 °C (400 °F) for 20-25 minutes until puffed, golden and dry; cool completely.
  3. Whisk the milk, sugar and cornstarch in a saucepan over medium heat until thickened into a custard, 4-5 minutes; off the heat, beat in the remaining butter and the vanilla until glossy.
  4. Sandwich the two choux layers with the custard filling, spreading it in an even layer.
  5. Chill for at least 1 hour so the filling firms up, then dust with the powdered sugar and cut into a square to serve.
