- Preparation: 20 min
- Cooking: 25 min
- Makes: 1 serving (239 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy, egg
Ingredients
- 180 g Potatoes, russet, raw
- 30 g Potato starch
- 20 g Eggs, whole, raw
- 1 g Salt
- 8 g Butter, unsalted
Method
- Boil the potatoes until tender, then drain and mash while hot, leaving no lumps.
- Once cooled slightly, mix in the potato starch, egg and salt to make a smooth, firm dough.
- Shape the dough into small flattened ovals, pressing a shallow thumbprint indent into the centre of each, the traditional shape that helps them cook evenly.
- Drop into a large pot of gently boiling salted water and cook for 3-4 minutes after they rise to the surface, until cooked through.
- Lift out with a slotted spoon, toss with the melted butter, and serve hot as a side dish, or with a sauce as a light main.
