  • Preparation: 60 min
  • Cooking: 22 min
  • Makes: 1 serving (190 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: beef, egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 1 g Yeast, active dry
  • 25 g Water
  • 0.5 g Salt
  • 60 g Beef, ground, 80% lean, raw
  • 15 g Carrots, raw
  • 15 g Onions, raw
  • 10 g Bread, white
  • 8 g Eggs, whole, raw
  • 0.2 g Marjoram, dried
  • 0.2 g Black pepper
  • 10 g Vegetable oil

Method

  1. Dissolve the yeast in the warm water, mix in the flour and salt, and knead to a smooth dough; cover and let rise for 45 minutes.
  2. Meanwhile, simmer the ground beef with the diced carrot and onion in a little water for 15 minutes until the meat is cooked and the vegetables are soft; drain well.
  3. Soak the bread in a splash of water, squeeze dry, then mix into the meat with the egg, marjoram and pepper, and chop everything to a fine, spreadable filling.
  4. Roll the risen dough thin, cut into rectangles, spoon the filling onto each, and fold and pinch closed into a small oblong parcel.
  5. Heat plenty of oil in a deep pan to 180 °C (350 °F) and fry the pastries for 3-4 minutes per side until deep golden and cooked through; only a little oil is actually absorbed.
  6. Drain on paper towels and serve hot, traditionally with a cup of spicy red barszcz.
