  • Cooking: 42 min
  • Makes: 1 serving (302 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: gluten, pork

Ingredients

  • 150 g Potatoes, russet, raw
  • 30 g Flour, all-purpose
  • 1 g Yeast, active dry
  • 1 g Salt
  • 100 g Pork, ground, raw
  • 20 g Onions, raw
  • 0.2 g Black pepper

Method

  1. Boil the potatoes until tender, then drain and mash; mix in the flour, yeast and half the salt to make a soft, sticky dough, and let rest for 20 minutes.
  2. Meanwhile, mix the ground pork with the chopped onion, remaining salt and the pepper.
  3. With wet hands, flatten a portion of the potato dough, place a spoonful of the pork filling in the centre, and fold and shape into a large round dumpling, sealing well.
  4. Lower the dumplings into a large pot of gently boiling salted water and cook for 20-25 minutes, until they float and the filling is cooked through with no pink remaining (74 °C/165 °F).
  5. Lift out with a slotted spoon and serve hot, with melted butter or fried bacon and onion if you like.
