Toruń Gingerbread (Pierniki)
One serving has 318 kcal and 5 g protein, and at least a fifth of a woman's daily need of manganese (47%), selenium (31%), thiamin (29%) and riboflavin (23%). Ready in 86 minutes.

- Preparation: 75 min
- Cooking: 11 min
- Makes: 1 serving (88.2 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten, honey
Ingredients
- 40 g Flour, all-purpose
- 20 g Honey
- 10 g Sugar, brown
- 8 g Butter, unsalted
- 8 g Eggs, whole, raw
- 1 g Ginger, ground
- 0.5 g Cinnamon
- 0.2 g Cloves
- 0.5 g Baking soda
Method
- Warm the honey gently until runny, then beat with the brown sugar, butter and egg.
- Mix in the flour, ginger, cinnamon, cloves and baking soda to form a smooth, firm dough. This is for 1 portion of a few cookies; multiply by 8-10 for a full batch.
- Wrap and rest the dough for at least 1 hour (traditional pierniki dough is often rested for days or weeks for the best flavour, but 1 hour still works well).
- Roll out on a floured surface and cut into shapes.
- Bake at 180 °C (350 °F) for 10-12 minutes until just set; the cookies firm up further as they cool.
- Cool completely before serving; pierniki keep well in a tin for weeks and taste even better after a few days.
