  • Makes: 1 serving (227 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein, Low carb
  • Contains: egg, meat

Ingredients

  • 60 g Lamb liver, raw
  • 70 g Lamb, ground, raw
  • 60 g Eggs, whole, raw
  • 20 g Onions, raw
  • 5 g Parsley, fresh
  • 3 g Dill, fresh
  • 8 g Vegetable oil
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Finely chop the lamb liver and mix with the ground lamb, chopped onion, parsley, dill, salt and pepper.
  2. Hard-boil one egg's worth of the egg (about half the total weight); once cooled, peel it.
  3. Beat the remaining egg into the meat mixture to bind it.
  4. Press half the meat mixture into an oiled loaf tin, nestle the boiled egg into the centre, then cover with the rest of the meat mixture, patting it smooth.
  5. Brush the top with the oil and bake at 180 °C (350 °F) for 45-55 minutes until firm and cooked through with no pink remaining (74 °C/165 °F).
  6. Cool slightly, then slice so each piece shows a ring of egg in the centre; drob is traditionally served cold or warm at Easter.
