  • Preparation: 80 min
  • Cooking: 9 min
  • Makes: 1 serving (127 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 20 g Flour, all-purpose
  • 25 g Egg whites, raw
  • 15 g Egg yolks, raw
  • 20 g Sugar, powdered
  • 15 g Butter, unsalted
  • 17 g Chocolate, dark
  • 10 g Milk, whole
  • 5 g Spirits

Method

  1. Whisk the egg whites with half the powdered sugar in a bowl set over a pan of simmering water until warm and glossy, then remove and whisk until thick and cool.
  2. Fold in the flour gently and spread thinly onto a lined tray; bake at 180 °C (350 °F) for 8-10 minutes until just set. Repeat to make several thin sheets if making a full cake, then cool completely.
  3. Beat the egg yolks with the remaining powdered sugar until pale, then beat in the softened butter.
  4. Melt the chocolate with the milk, cool slightly, then beat into the butter mixture along with the rum to make a smooth chocolate buttercream.
  5. Moisten the sponge sheets lightly and sandwich them together with the buttercream, then cover the outside completely and smooth into a neat cylinder, echoing the shape of a French officer's cap.
  6. Chill until firm, then scatter with chocolate shavings before slicing to serve.
