Ingredients

  • 70 g Bell pepper, red, raw
  • 25 g Eggplant, raw
  • 3 g Garlic, raw
  • 10 g Sunflower oil
  • 3 g Vinegar, white
  • 3 g Chili peppers, red, raw
  • 0.5 g Salt

Method

  1. Roast the whole red peppers and the eggplant directly over an open flame or under a hot broiler, turning often, until the skins are blackened and blistered all over, about 15-20 minutes. Makes about 1 small jar; multiply the recipe for a larger batch.
  2. Let the vegetables steam under a cover for 10 minutes, then peel away the blackened skins and remove the pepper seeds.
  3. Finely chop the roasted pepper and eggplant flesh, or pulse briefly in a food processor for a slightly coarse texture rather than a smooth purée.
  4. Finely mince the garlic and chili and stir them through the chopped vegetables.
  5. Heat the oil in a pan, add the chopped mixture, and cook over low heat for 20-25 minutes, stirring often, until the excess liquid evaporates and the mixture turns a deep brick-red and glossy.
  6. Stir in the vinegar and salt, cook 2 minutes more, then cool and store in a sterilized jar; serve at room temperature as a spread.
