Česnica (Serbian Christmas Bread)
One serving has 239 kcal and 6 g protein, and at least a fifth of a woman's daily need of thiamin (51%), folate (32%), selenium (31%), riboflavin (28%) and niacin (25%). Ready in 120 minutes.

- Preparation: 90 min
- Cooking: 30 min
- Makes: 1 serving (84 g)
- Difficulty: Medium
- Diets: Vegan, Dairy-free
- Contains: gluten
Ingredients
- 50 g Flour, all-purpose
- 25 g Water
- 1.5 g Yeast, active dry
- 0.5 g Salt
- 5 g Olive oil
- 2 g Sugar
Method
- Dissolve the yeast and sugar in the warm water and let stand for 10 minutes until foamy. Makes 1 of about 10 slices of a whole česnica; multiply the recipe by 10 for a full round loaf.
- Mix in the flour, salt and oil, and knead for 8-10 minutes until smooth and elastic.
- Cover and let rise in a warm place for about 1 hour until doubled.
- Shape into a round loaf; for the full batch, a small clean coin wrapped in foil is traditionally hidden inside before the final shaping, for good luck.
- Let rise for 30 minutes more, then bake at 200 C (400 F) for 25-30 minutes until deep golden and it sounds hollow when tapped.
- Cool before slicing; česnica is traditionally broken and shared at Serbian Christmas or a family's slava (patron saint day).
