  • Cooking: 40 min
  • Makes: 1 serving (183 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 40 g Phyllo dough
  • 50 g Feta cheese
  • 30 g Cottage cheese
  • 25 g Eggs, whole, raw
  • 30 g Milk, whole
  • 8 g Butter, unsalted

Method

  1. Beat the eggs with the milk in a bowl, then crumble in the feta and cottage cheese and mix well. Makes 1 of 8 slices of a whole gibanica; multiply the recipe by 8 for a full pan.
  2. Brush a baking dish with melted butter and lay in a sheet of phyllo, letting the edges hang over the side; brush with more butter.
  3. Scrunch or loosely crumple 2-3 more sheets of phyllo, dip them briefly in the cheese mixture, and layer them into the dish; repeat, alternating scrunched phyllo with spoonfuls of the cheese mixture, until both are used up.
  4. Fold the overhanging edges over the top and brush generously with the remaining butter.
  5. Bake at 180 C (350 F) for 35-40 minutes until puffed and golden brown all over.
  6. Rest for 10 minutes before cutting into squares; serve warm or at room temperature.
