Kajmak (Clotted Cream)
One serving has 194 kcal and 6 g protein, and at least a fifth of a woman's daily need of cobalamin (30%), riboflavin (28%), vitamin A (27%) and phosphorus (20%). Ready in 543 minutes.

- Preparation: 483 min
- Cooking: 60 min
- Makes: 1 serving (180 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free, Low carb
- Contains: dairy
Ingredients
- 150 g Milk, whole
- 30 g Cream, heavy
- 0.3 g Salt
Method
- Pour the milk and cream into a wide, heavy pan and bring to a gentle simmer, then reduce the heat right down so it barely bubbles.
- Simmer very gently, uncovered and without stirring, for about 45-60 minutes, letting a thick skin form on the surface as the liquid slowly reduces.
- Carefully lift off the skin in one piece with a slotted spoon and set it aside on a plate; continue simmering and skimming every 10-15 minutes as new skins form.
- Let the collected skins cool, then layer them in a dish, sprinkling with the salt between layers, and press down gently.
- Cover and refrigerate for at least 8 hours, or up to a few days, so the layers meld into a firm, rich, clotted-cream-like spread; serve cold as a topping for bread or grilled meats.
