Ingredients
- 150 g Sauerkraut
- 150 g Duck, raw
- 30 g Onions, raw
- 10 g Goose fat
- 0.5 g Paprika
- 0.2 g Bay leaves
- 0.2 g Black pepper
- 0.2 g Salt
Method
- Rinse the sauerkraut briefly in cold water to mellow its sharpness, then drain well and squeeze out the excess liquid.
- Season the duck pieces with the salt, pepper and half the paprika, then brown them in a hot pan in the goose fat for 4-5 minutes per side; remove and set aside.
- In the same fat, cook the onion for 4-5 minutes until soft, then stir in the sauerkraut, remaining paprika and the bay leaf.
- Spread half the sauerkraut in a baking dish, nestle the duck on top, then cover with the remaining sauerkraut.
- Cover and bake at 180 C (350 F) for 1-1.5 hours until the duck is fully tender and cooked through (74 C/165 F), removing the cover for the last 20 minutes so the top browns.
- Serve hot, spooning the braised sauerkraut alongside the duck.
