  • Preparation: 20 min
  • Cooking: 38 min
  • Makes: 1 serving (306 g)
  • Difficulty: Medium
  • Contains: beef, celery, dairy, gluten, meat

Ingredients

  • 60 g Flour, all-purpose
  • 10 g Butter, unsalted
  • 25 g Water
  • 1 g Salt
  • 110 g Lamb, ground, raw
  • 50 g Potatoes, raw
  • 30 g Onions, raw
  • 0.3 g Black pepper
  • 20 g Beef broth

Method

  1. Rub the butter into the flour, then mix in the salt and water to make a smooth, firm dough; wrap and rest for 20 minutes.
  2. Finely dice the lamb, potato and onion by hand, since traditional echpochmak filling is knife-cut rather than ground, and mix with the pepper.
  3. Roll the dough into circles, spoon the filling into the centre of each, then fold up three sides to form a triangle, pinching the seams well but leaving a small hole at the top.
  4. Pour a little of the beef broth into the hole before the final seal, so the filling stays juicy as it bakes.
  5. Bake at 200 °C (400 °F) for 35-40 minutes until the pastry is golden and the lamb is cooked through with no pink remaining (74 °C/165 °F).
  6. Serve hot; the rich broth inside is traditionally sipped from the hole before eating the pastry.
