  • Cooking: 45 min
  • Makes: 1 serving (444 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, gluten, honey, nut, sulphite

Ingredients

  • 300 g Milk, whole
  • 30 g Semolina
  • 25 g Sugar
  • 10 g Butter, unsalted
  • 15 g Walnuts
  • 15 g Almonds
  • 20 g Apricots, dried
  • 15 g Candied fruit
  • 3 g Vanilla extract
  • 10 g Honey
  • 0.5 g Salt

Method

  1. Pour the milk into a wide ovenproof skillet and bake at 150 C (300 F) for 45-60 minutes, skimming off each golden skin that forms on top, until you have 6-8 skins; reserve the skins and the reduced milk.
  2. Toast the walnuts and almonds in a dry pan for 2-3 minutes, then coarsely chop them with the dried apricots and candied fruit.
  3. Bring the reserved baked milk back to a simmer, whisk in the semolina, sugar and salt, and cook for 5-7 minutes, stirring, until it forms a thick porridge; stir in the vanilla and half the butter.
  4. In a buttered baking dish, layer a third of the semolina, a few of the milk skins and a third of the nut and fruit mix; repeat twice more, finishing with skins on top.
  5. Dot with the remaining butter, drizzle with the honey, and bake at 200 C (400 F) for 12-15 minutes until the top is golden and lightly caramelized.
  6. Rest for 5 minutes, then serve warm, cut into wedges with the caramelized top facing up.
