  • Cooking: 25 min
  • Makes: 1 serving (415 g)
  • Difficulty: Easy
  • Diets: Pescatarian, Gluten-free, Dairy-free
  • Contains: egg, fish, mustard

Ingredients

  • 70 g Herring, pickled
  • 100 g Potatoes, raw
  • 60 g Carrots, raw
  • 90 g Beets, raw
  • 20 g Onions, red, raw
  • 45 g Mayonnaise
  • 30 g Eggs, whole, raw

Method

  1. Boil the potatoes, carrots and beetroot separately (the beetroot takes about 40 minutes) until fork-tender, then cool, peel and grate each on the coarse side of a box grater, keeping them separate.
  2. Boil the egg for 9 minutes, cool in cold water, then peel and grate it separately.
  3. Drain the pickled herring, pat it dry and cut into small even cubes; finely chop the onion.
  4. In a deep dish or ring mould, layer the herring, then the onion, then a third of the mayonnaise spread thin, then the grated potato, more mayonnaise, then the carrot, more mayonnaise, and finish with the beetroot on top.
  5. Spread the last of the mayonnaise over the beetroot so no red shows through, then scatter the grated egg over the surface.
  6. Cover and chill for at least 2 hours so the layers set and the flavours meld before slicing and serving cold.
