Ingredients

  • 150 g Cherries, sour
  • 30 g Sugar
  • 15 g Potato starch
  • 300 g Water

Method

  1. Rinse the sour cherries and pit them if fresh, then put them in a saucepan with the water and bring to a boil.
  2. Simmer for 5 minutes until the cherries soften and the water turns deep red, then stir in the sugar until dissolved.
  3. Strain the liquid into a clean pan, keeping the cooked cherries aside, and return the liquid to a gentle simmer.
  4. Mix the potato starch with a splash of cold water to a smooth slurry, then whisk it into the simmering liquid.
  5. Cook for 1-2 minutes, stirring constantly, until the kissel thickens and turns glossy, then stir the cherries back in.
  6. Pour into cups or bowls and chill for at least 1 hour; kissel thickens further as it cools and is drunk from a cup or eaten with a spoon.
