  • Preparation: 90 min
  • Cooking: 40 min
  • Makes: 1 serving (324 g)
  • Difficulty: Hard
  • Diets: Pescatarian, High protein
  • Contains: dairy, egg, fish, gluten

Ingredients

  • 70 g Flour, all-purpose
  • 35 g Milk, whole
  • 15 g Butter, unsalted
  • 2 g Yeast, active dry
  • 35 g Eggs, whole, raw
  • 3 g Sugar
  • 1.5 g Salt
  • 80 g Salmon, raw
  • 25 g Rice, white, long-grain
  • 40 g Mushrooms, white button, raw
  • 15 g Onions, raw
  • 2 g Dill, fresh

Method

  1. Warm the milk to lukewarm, stir in the yeast and a pinch of the sugar, and leave for 10 minutes until foamy. Makes 1 slice of a loaf serving about 6; multiply the whole recipe by 6 for a full coulibiac.
  2. Mix in the flour, remaining sugar, salt, half the butter and half the beaten egg to make a soft dough; knead for 5 minutes, then cover and let rise for 1 hour until doubled.
  3. Meanwhile cook the rice in salted water until just tender and drain; boil the remaining egg for 9 minutes, then cool, peel and chop it.
  4. Melt the remaining butter in a pan, sauté the onion and mushrooms for 5 minutes, season lightly, stir in the dill, and let the mixture cool.
  5. Cut the salmon into a strip and season lightly. Pat the risen dough into an oval, spread half the rice down the centre, then the mushroom mixture, the salmon, the chopped egg, and the rest of the rice on top.
  6. Fold the dough over the filling to enclose it completely, sealing the seam underneath, and set it seam-down on a lined tray; brush with the reserved beaten egg.
  7. Rest for 15 minutes, then bake at 190 C (375 F) for 35-40 minutes until deep golden and the salmon is cooked through; rest 10 minutes before slicing.
