  • Preparation: 120 min
  • Cooking: 40 min
  • Makes: 1 serving (98.8 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 35 g Flour, all-purpose
  • 15 g Milk, whole
  • 8 g Butter, unsalted
  • 10 g Sugar
  • 10 g Eggs, whole, raw
  • 1.5 g Yeast, active dry
  • 8 g Raisins
  • 5 g Candied fruit
  • 1 g Vanilla extract
  • 0.3 g Salt
  • 5 g Sugar, powdered

Method

  1. Warm the milk, dissolve the yeast and a spoon of the sugar in it, and let stand for 10 minutes until foamy. Makes 1 slice of a whole kulich serving about 10; multiply the recipe by 10 for a full loaf baked in a tall tin.
  2. Beat the egg with the remaining sugar and salt, then mix with the yeast mixture, melted butter and vanilla.
  3. Work in the flour to form a soft, slightly sticky dough; knead for 8-10 minutes until smooth and elastic.
  4. Fold in the raisins and candied fruit, then cover and let rise in a warm place for about 1.5 hours until doubled.
  5. Shape into a tall loaf, place in a greased tall tin, and prove for 30-40 minutes more.
  6. Bake at 180 C (350 F) for 35-45 minutes until a skewer comes out clean, tenting with foil if the top browns too fast.
  7. Cool completely, then top with icing made from the powdered sugar loosened with a few drops of water, letting it drip down the sides.
