  • Preparation: 45 min
  • Cooking: 35 min
  • Makes: 1 serving (231 g)
  • Difficulty: Medium
  • Contains: dairy, egg, gluten, poultry

Ingredients

  • 45 g Flour, all-purpose
  • 15 g Butter, unsalted
  • 20 g Eggs, whole, raw
  • 15 g Sour cream
  • 70 g Chicken thighs, boneless, skinless, raw
  • 20 g Rice, white, long-grain
  • 35 g Mushrooms, white button, raw
  • 10 g Onions, raw
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Make a simple pastry by rubbing the butter into the flour with a pinch of the salt, then binding with the sour cream and a little cold water into a smooth dough; chill for 30 minutes. Makes 1 of 8 slices of a whole kurnik; multiply the recipe by 8 for a whole pie serving 8.
  2. Cook the rice in salted water until tender and drain. Poach or pan-fry the chicken until cooked through (74 C/165 F) and shred it.
  3. Sauté the onion and mushrooms in a little butter for 5 minutes until soft, season with salt and pepper, and boil the extra egg for 9 minutes, then peel and slice it.
  4. Roll out two-thirds of the dough and line a pie dish; layer in the rice, then the chicken, then the mushroom mixture, then the sliced egg, moistening each layer with a little sour cream.
  5. Roll out the remaining dough for a lid, cover the filling, seal and crimp the edges, cut a small steam vent, and brush with beaten egg.
  6. Bake at 190 C (375 F) for 30-35 minutes until the pastry is golden and the filling is piping hot throughout.
