- Preparation: 2880 min
- Cooking: 15 min
- Makes: 1 serving (286 g)
- Difficulty: Medium
- Diets: Vegan, Dairy-free
- Contains: gluten
Ingredients
- 25 g Bread, rye
- 8 g Sugar
- 0.3 g Yeast, active dry
- 250 g Water
- 3 g Raisins
Method
- Cut the rye bread into cubes and toast at 180 C (350 F) for 15-20 minutes until dark golden and dried out, to build a deep, malty flavour.
- Put the toasted bread in a large jar with the hot (not boiling) water; stir in the sugar and let cool to lukewarm. This recipe makes about 4 servings; scale up the jar size to match.
- Sprinkle in the yeast, stir once, cover with a cloth rather than a tight lid, and leave at room temperature for 24-36 hours to ferment, tasting after a day for a pleasant sour-sweet tang.
- Strain the liquid through a fine sieve into clean bottles, dividing the raisins among them.
- Seal loosely and refrigerate for a further 12-24 hours, where the raisins add gentle carbonation, then strain again before pouring.
- Serve very cold over ice; the fermentation keeps the alcohol content very low, which is why kvass is treated as a refreshing soft drink.
