  • Preparation: 60 min
  • Cooking: 30 min
  • Makes: 1 serving (119 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey, nut

Ingredients

  • 25 g Flour, all-purpose
  • 12 g Honey
  • 10 g Sugar
  • 8 g Butter, unsalted
  • 12 g Eggs, whole, raw
  • 0.5 g Baking soda
  • 35 g Sour cream
  • 8 g Sugar, powdered
  • 8 g Walnuts

Method

  1. Whisk the egg with the sugar, then set the bowl over a pan of simmering water and whisk in the honey and butter until melted and smooth; remove from the heat. Makes 1 of 12 slices of a whole cake; multiply the recipe by 12 and bake as 6-8 thin layers.
  2. Off the heat, sift in the flour and baking soda and stir to a smooth, thick batter.
  3. Spread thinly on a lined baking sheet and bake at 180 C (350 F) for 4-5 minutes per layer until golden brown; repeat to make several thin layers, trimming the edges neatly and saving the trimmings.
  4. Crush the trimmings into fine crumbs for coating the cake later.
  5. Whip the sour cream with the powdered sugar until smooth, then spread a thin layer between each honey layer and stack them up.
  6. Cover the top and sides with the remaining cream, press the reserved crumbs and chopped walnuts over the outside, and chill for at least 4 hours, ideally overnight, before slicing.
