  • Makes: 1 serving (187 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: alcohol, dairy, egg, nut

Ingredients

  • 100 g Cottage cheese
  • 15 g Butter, unsalted
  • 15 g Sugar, powdered
  • 15 g Sour cream
  • 15 g Eggs, whole, raw
  • 1 g Vanilla extract
  • 10 g Raisins
  • 8 g Candied fruit
  • 8 g Almonds

Method

  1. Press the cottage cheese through a fine sieve until smooth, then wrap in cheesecloth and let it drain in the fridge for a few hours to remove excess whey. Makes 1 of about 8 portions of a whole paskha; multiply the recipe by 8 and press into a traditional pyramid mould lined with cheesecloth.
  2. Beat the butter with the powdered sugar until pale and fluffy.
  3. Whisk the egg with a splash of the sour cream in a small saucepan over low heat, stirring constantly, until it just thickens to a light custard (do not let it boil); cool slightly.
  4. Combine the sieved cheese, creamed butter, egg custard, vanilla, raisins, candied fruit and almonds and mix until smooth and even.
  5. Pack the mixture tightly into a cheesecloth-lined mould, fold the cloth over the top and weight it down; chill for at least 8 hours, ideally overnight, so it drains further and firms up.
  6. Unmould onto a plate, peel away the cloth, and serve cold, sliced thin.
