  • Preparation: 45 min
  • Cooking: 10 min
  • Makes: 1 serving (281 g)
  • Difficulty: Medium
  • Contains: beef, dairy, egg, gluten, pork

Ingredients

  • 80 g Flour, all-purpose
  • 15 g Eggs, whole, raw
  • 30 g Water
  • 1 g Salt
  • 60 g Beef, ground, 85% lean, raw
  • 40 g Pork, ground, raw
  • 25 g Onions, raw
  • 0.3 g Black pepper
  • 10 g Butter, unsalted
  • 20 g Sour cream

Method

  1. Mix the flour with the egg, water and half the salt into a firm dough; knead for 8 minutes until smooth, then cover and rest for 30 minutes.
  2. Mix the beef and pork with the finely chopped onion, remaining salt and the pepper until well combined.
  3. Roll the dough thin and cut into rounds about 7 cm across; place a small spoonful of filling in the centre of each.
  4. Fold each round in half over the filling, pinch the edges to seal tightly, then bring the two corners together and pinch to form the traditional ear shape.
  5. Bring a large pot of salted water to a boil, drop in the pelmeni, and cook for 7-8 minutes until they float and the meat is cooked through (74 C/165 F), stirring gently so they don't stick.
  6. Drain and serve hot, topped with the butter and sour cream.
