  • Cooking: 35 min
  • Makes: 1 serving (230 g)
  • Difficulty: Medium

  • Contains: dairy, egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 20 g Milk, whole
  • 12 g Butter, unsalted
  • 1.5 g Yeast, active dry
  • 20 g Eggs, whole, raw
  • 5 g Sugar
  • 1 g Salt
  • 110 g Cabbage, green, raw
  • 15 g Onions, raw

Method

  1. Warm the milk, dissolve the yeast and sugar in it, and let stand for 10 minutes until foamy; mix in the flour, salt, half the butter and half the beaten egg to a soft dough, knead for 8 minutes, then cover and let rise for 1 hour. Makes 1 of 8 slices of a whole pirog; multiply the recipe by 8 for a full pie serving 8.
  2. Meanwhile, finely shred the cabbage and finely chop the onion.
  3. Melt the remaining butter in a pan, add the onion and cabbage with a pinch of salt, and cook over medium heat for 12-15 minutes, stirring often, until soft and lightly golden; cool.
  4. Boil the remaining egg for 9 minutes, cool, peel, chop and stir it into the cooled cabbage.
  5. Roll out two-thirds of the risen dough to line a pie dish, fill with the cabbage mixture, then roll the rest of the dough for a lid; seal the edges and cut a steam vent.
  6. Brush with the remaining beaten egg and bake at 190 C (375 F) for 30-35 minutes until deep golden.
  7. Cool for 10 minutes before slicing; serve warm or at room temperature.
