  • Preparation: 80 min
  • Cooking: 20 min
  • Makes: 1 serving (232 g)
  • Difficulty: Medium
  • Contains: beef, dairy, egg, gluten

Ingredients

  • 70 g Flour, all-purpose
  • 30 g Milk, whole
  • 8 g Butter, unsalted
  • 1.5 g Yeast, active dry
  • 15 g Eggs, whole, raw
  • 3 g Sugar
  • 1 g Salt
  • 70 g Beef, ground, 85% lean, raw
  • 25 g Onions, raw
  • 8 g Vegetable oil

Method

  1. Warm the milk, dissolve the yeast and sugar in it, and let stand for 10 minutes until foamy; mix in the flour, salt, butter and half the egg to a soft dough, knead for 8 minutes, then cover and let rise for 1 hour.
  2. Meanwhile, heat the oil in a pan and cook the finely chopped onion for 3-4 minutes until soft, then add the ground beef and cook for 6-8 minutes, breaking it up, until browned and cooked through (74 C/165 F); season and cool slightly.
  3. Divide the risen dough into 2 pieces and flatten each into a small disc.
  4. Spoon the beef filling onto one half of each disc, fold the dough over to enclose it, and pinch the edges firmly to seal into a small oval or crescent shape.
  5. Place seam-down on a lined tray, brush with the remaining beaten egg, and let rest for 15 minutes.
  6. Bake at 190 C (375 F) for 18-20 minutes until golden brown all over; serve warm or at room temperature.
