  • Makes: 1 serving (276 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: dairy, egg, gluten, poultry

Ingredients

  • 150 g Chicken breast, boneless, skinless, raw
  • 25 g Butter, unsalted
  • 20 g Bread, white
  • 20 g Milk, whole
  • 15 g Eggs, whole, raw
  • 30 g Breadcrumbs, dry
  • 15 g Vegetable oil
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Soak the bread in the milk for 5 minutes, then squeeze out the excess milk.
  2. Finely mince or process the chicken breast with the soaked bread, salt and pepper until smooth and slightly sticky.
  3. Work in half the butter, cut into small pieces, until evenly distributed through the mince; chill the mixture for 20 minutes so it is easier to shape.
  4. Shape into oval cutlets, each hiding a small cube of the remaining butter in the centre.
  5. Dip each cutlet in the beaten egg, then coat thoroughly in the breadcrumbs.
  6. Fry in the oil over medium heat for 4-5 minutes per side until golden and cooked through (74 C/165 F), then drain briefly on paper towel before serving.
