  • Contains: dairy, egg, gluten

Ingredients

  • 20 g Flour, all-purpose
  • 15 g Sugar
  • 20 g Eggs, whole, raw
  • 10 g Butter, unsalted
  • 5 g Cocoa powder
  • 15 g Sour cream
  • 15 g Apricot jam
  • 10 g Chocolate, dark

Method

  1. Beat the eggs with the sugar until pale and thick, then fold in the sifted flour, cocoa powder and baking soda. Makes 1 of 12 slices of a whole cake; multiply the recipe by 12 for a full 2-layer cake.
  2. Melt half the butter and fold it in gently, then pour the batter into a lined tin and bake at 180 C (350 F) for 20-25 minutes until a skewer comes out clean.
  3. Cool the sponge completely, then split it horizontally into two layers.
  4. Warm the apricot jam slightly and spread it between the layers along with the sour cream, then stack the cake back together.
  5. Melt the dark chocolate with the remaining butter and pour it over the top and sides of the cake, smoothing it with a spatula.
  6. Chill for at least 1 hour to set the glaze before slicing.
