  • Makes: 1 serving (593 g)
  • Difficulty: Medium
  • Contains: beef, celery, dairy, gluten, sulphite

Ingredients

  • 80 g Beef chuck, raw
  • 200 g Beef broth
  • 20 g Barley, pearl
  • 80 g Potatoes, raw
  • 30 g Carrots, raw
  • 20 g Onions, raw
  • 35 g Pickles, dill
  • 5 g Vinegar, cider
  • 5 g Butter, unsalted
  • 2 g Dill, fresh
  • 0.5 g Salt
  • 0.2 g Bay leaves
  • 15 g Sour cream
  • 100 g Water

Method

  1. Simmer the beef in the broth with the bay leaf for about 1 hour until tender, skimming any foam; lift out the meat, dice it, and return it to the pot.
  2. Rinse the pearl barley and add it to the simmering broth; cook for 25-30 minutes until tender.
  3. Meanwhile, dice the potato and carrot, and finely chop the onion; sauté the onion and carrot in the butter for 5 minutes until soft.
  4. Add the sautéed vegetables and diced potato to the pot and simmer for 15 minutes until the potato is tender.
  5. Dice the pickles and stir them in with the vinegar; simmer for 5 more minutes so the tangy flavour comes through, then season with the salt.
  6. Ladle into bowls and finish with a spoon of sour cream and the chopped dill.
