  • Preparation: 95 min
  • Cooking: 25 min
  • Makes: 1 serving (108 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 60 g Strawberries, raw
  • 45 g Sugar
  • 3 g Lemon juice

Method

  1. Rinse the strawberries and hull them, keeping them whole or halving larger ones.
  2. Layer the strawberries with the sugar in a bowl and let them sit for 1-2 hours until they release their juices.
  3. Tip everything into a wide pan and bring to a gentle boil, skimming off any foam.
  4. Simmer gently for 15-20 minutes, without stirring too much, until the syrup thickens slightly and the berries turn glossy and translucent; stir in the lemon juice near the end. Makes about 1 small jar; multiply the recipe for a larger batch and store in sterilized jars.
  5. Cool completely; varenye is served as a spoonable preserve alongside tea, with the fruit left whole rather than mashed into a set jam.
