  • Cooking: 12 min
  • Makes: 1 serving (111 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 25 g Milk, whole
  • 15 g Butter, unsalted
  • 15 g Sugar
  • 1.5 g Yeast, active dry
  • 8 g Eggs, whole, raw
  • 0.3 g Cardamom
  • 1 g Cinnamon
  • 0.3 g Salt

Method

  1. Warm the milk, dissolve the yeast and a little of the sugar in it, and let stand for 10 minutes until foamy.
  2. Mix in the flour, most of the remaining sugar, the salt, cardamom and half the melted butter to a soft dough (keep a little sugar back for the filling); knead 8-10 minutes, then cover and let rise for 1 hour. Makes 1 bun; multiply the recipe for a full batch.
  3. Roll the dough out into a rectangle, spread with the remaining melted butter, and sprinkle with the cinnamon and reserved sugar.
  4. Roll up tightly from one long edge, then cut and shape into a bun, either a classic knot or a simple pinwheel slice.
  5. Place on a lined tray, cover, and let prove for 30-40 minutes until puffy.
  6. Brush with the beaten egg and bake at 200 C (400 F) for 10-12 minutes until golden brown; cool slightly before serving.
