  • Preparation: 15 min
  • Cooking: 20 min
  • Makes: 1 serving (78.7 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 15 g Butter, unsalted
  • 25 g Sugar
  • 15 g Eggs, whole, raw
  • 15 g Flour, all-purpose
  • 8 g Cocoa powder
  • 0.5 g Vanilla extract
  • 0.2 g Salt

Method

  1. Melt the butter, then whisk it with the sugar and egg until smooth. Makes 1 of 8 slices of a whole cake; multiply the recipe by 8 for a full 20 cm cake.
  2. Sift in the flour, cocoa powder and salt, and stir in the vanilla, mixing just until smooth without overbeating.
  3. Pour into a lined and buttered tin and bake at 175 C (350 F) for 18-22 minutes; the centre should still look slightly underbaked and wobble a little when the tin is shaken.
  4. Cool in the tin for at least 20 minutes; the cake firms up on the outside while staying dense and gooey in the middle.
  5. Serve at room temperature, often with lightly whipped cream, dusted with a little extra cocoa if you like.
