  • Preparation: 30 min
  • Cooking: 25 min
  • Makes: 1 serving (401 g)
  • Difficulty: Medium
  • Contains: dairy, egg, gluten, pork

Ingredients

  • 220 g Potatoes, russet, raw
  • 50 g Flour, all-purpose
  • 15 g Eggs, whole, raw
  • 1 g Salt
  • 50 g Bacon, raw
  • 30 g Onions, raw
  • 15 g Butter, unsalted
  • 20 g Cranberry sauce

Method

  1. Boil the potatoes until tender, then drain, mash until smooth and let cool; mix with the flour, egg and salt to form a firm dough.
  2. Meanwhile, finely dice the bacon and onion and fry together for 5-6 minutes until the bacon is cooked and the onion is soft; cool slightly.
  3. Divide the potato dough into balls, flatten each into a disc, and place a spoonful of the bacon and onion filling in the centre.
  4. Fold the dough up and around the filling, sealing it completely into a smooth ball.
  5. Lower the dumplings into a large pot of gently simmering water and cook for 15-20 minutes until they float and are cooked through.
  6. Drain and serve hot with the melted butter and the cranberry sauce alongside.
