  • Preparation: 60 min
  • Cooking: 25 min
  • Makes: 1 serving (180 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, nut

Ingredients

  • 20 g Flour, all-purpose
  • 15 g Sugar
  • 20 g Eggs, whole, raw
  • 20 g Milk, whole
  • 10 g Egg yolks, raw
  • 5 g Cornstarch
  • 40 g Cream, heavy
  • 15 g Jam
  • 30 g Almond paste
  • 5 g Sugar, powdered

Method

  1. Beat the eggs with the sugar until pale and thick, then fold in the sifted flour; pour into a lined tin and bake at 180 C (350 F) for 20-22 minutes until springy. Makes 1 of 12 slices of a whole cake; multiply the recipe by 12 and bake in a round tin.
  2. Whisk the egg yolks with a little sugar and the cornstarch, heat the milk, then whisk together and cook gently, stirring, until it thickens into a custard; cool completely.
  3. Whip the cream to soft peaks.
  4. Split the cooled sponge into layers; spread the bottom layer with the jam, then the custard, top with another sponge layer, and mound the whipped cream into a dome shape over the top.
  5. Roll out the almond paste thinly and drape it over the whole cake like a dome, smoothing and trimming the edges underneath.
  6. Dust with the powdered sugar just before serving; the cake is traditionally colored pale green with a marzipan rose on top.
