  • Makes: 1 serving (170 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, nut

Ingredients

  • 45 g Flour, all-purpose
  • 25 g Milk, whole
  • 10 g Butter, unsalted
  • 8 g Sugar
  • 1.5 g Yeast, active dry
  • 10 g Eggs, whole, raw
  • 0.3 g Cardamom
  • 0.3 g Salt
  • 25 g Almond paste
  • 40 g Cream, heavy
  • 5 g Sugar, powdered

Method

  1. Warm the milk, dissolve the yeast and sugar in it, and let stand for 10 minutes until foamy.
  2. Mix in the flour, salt, cardamom, melted butter and half the egg to a soft dough; knead for 8-10 minutes, then cover and let rise for 1 hour.
  3. Shape into a round bun, place on a lined tray, and let prove for 30-40 minutes; brush with the remaining beaten egg and bake at 200 C (400 F) for 12-15 minutes until golden. Cool completely.
  4. Slice off the top third of the bun and set aside as a lid; scoop out a little of the soft crumb from the base and mash it with the almond paste to loosen it, then spread it back into the bun.
  5. Whip the cream to soft peaks and pipe or spoon it generously over the almond paste.
  6. Replace the lid and dust with the powdered sugar; semlor are traditionally eaten in the weeks before Easter.
