  • Preparation: 90 min
  • Cooking: 50 min
  • Makes: 1 serving (138 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey, nut

Ingredients

  • 40 g Flour, all-purpose
  • 15 g Milk, whole
  • 10 g Butter, unsalted
  • 12 g Sugar
  • 10 g Eggs, whole, raw
  • 1 g Yeast, active dry
  • 0.3 g Salt
  • 30 g Walnuts
  • 10 g Honey
  • 10 g Cream, heavy

Method

  1. Warm the milk, dissolve the yeast and a little of the sugar in it, and let stand for 10 minutes until foamy.
  2. Mix in the flour, remaining sugar, salt, melted butter and egg to a soft dough; knead for 8-10 minutes, then cover and let rise for 1 hour. Makes 1 of about 16 slices of a whole potica; multiply the recipe by 16 for a full rolled loaf.
  3. Meanwhile, finely grind the walnuts and mix with the honey and cream to a spreadable paste.
  4. Roll the risen dough out into a large thin rectangle, spread the walnut filling evenly over it, and roll up tightly from one long edge like a jelly roll.
  5. Place seam-down in a greased loaf or bundt tin, curling it to fit if needed, and let it prove for 30-40 minutes.
  6. Bake at 170 C (340 F) for 45-50 minutes until deep golden, tenting with foil if the top browns too fast; cool before slicing.
