  • Makes: 1 serving (192 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, nut

Ingredients

  • 40 g Phyllo dough
  • 10 g Poppy seeds
  • 15 g Walnuts
  • 40 g Apples, raw
  • 25 g Cottage cheese
  • 5 g Raisins
  • 15 g Sugar
  • 12 g Eggs, whole, raw
  • 20 g Cream, heavy
  • 10 g Butter, unsalted
  • 0.3 g Cinnamon

Method

  1. Grate the apples and mix with a little of the sugar and the cinnamon; keep the poppy seeds, ground walnuts, and cottage cheese (mixed with a little of the sugar and one egg) as three separate fillings.
  2. Brush a baking dish with melted butter and layer in sheets of phyllo, brushing each with butter, until you have a base of 3-4 sheets.
  3. Spread the poppy seed filling over the phyllo base, cover with 2 more buttered phyllo sheets, then spread the apple filling, then more phyllo, then the walnut filling, more phyllo, then the cheese filling, and finish with the raisins scattered over, layering phyllo between each.
  4. Whisk the remaining eggs with the cream and remaining sugar and pour evenly over the whole assembled pastry so it seeps down through the layers.
  5. Bake at 180 C (350 F) for 40-45 minutes until puffed, golden and set in the centre.
  6. Cool for at least 20 minutes before cutting into squares; prekmurska gibanica is traditionally served warm or at room temperature.
