  • Preparation: 75 min
  • Cooking: 20 min
  • Makes: 1 serving (146 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, nut

Ingredients

  • 60 g Flour, all-purpose
  • 25 g Milk, whole
  • 12 g Butter, unsalted
  • 20 g Sugar
  • 12 g Eggs, whole, raw
  • 1.5 g Yeast, active dry
  • 0.3 g Salt
  • 15 g Walnuts
  • 0.5 g Cinnamon

Method

  1. Warm the milk, dissolve the yeast and half the sugar in it, and let stand 10 minutes until foamy.
  2. Mix in the flour, salt, melted butter and egg to a soft dough; knead for 8 minutes, then cover and let rise for 1 hour.
  3. Roll the dough into a long thin strip and wind it around a wooden spit or a foil-wrapped rolling pin in a spiral, slightly overlapping.
  4. Roast over hot charcoal or bake at 200 C (400 F), turning constantly, for about 15-20 minutes until golden brown all over.
  5. While still warm, roll the trdelník in the remaining sugar mixed with the ground walnuts and cinnamon.
  6. Slide it off the spit and let cool slightly before serving; it is traditionally eaten warm, torn into a spiral of flaky layers.
