  • Preparation: 110 min
  • Cooking: 45 min
  • Makes: 1 serving (105 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey

Ingredients

  • 45 g Flour, all-purpose
  • 20 g Milk, whole
  • 10 g Butter, unsalted
  • 8 g Sugar
  • 15 g Eggs, whole, raw
  • 1.5 g Yeast, active dry
  • 0.3 g Salt
  • 5 g Honey

Method

  1. Warm the milk, dissolve the yeast and sugar in it, and let stand for 10 minutes until foamy.
  2. Mix in the flour, salt, melted butter, honey and half the egg to a soft, rich dough; knead for 10 minutes until smooth and elastic. Makes 1 of about 20 slices of a whole korovai; multiply the recipe by 20 for a full ceremonial loaf.
  3. Set aside a small piece of dough, then shape the rest into a large round loaf and place on a lined tray.
  4. Use the reserved dough to shape traditional decorations, such as braided rings, wheat sheaves and small birds, and press them onto the top of the loaf.
  5. Cover and let rise for 45-60 minutes, then brush with the remaining beaten egg.
  6. Bake at 180 C (350 F) for 40-50 minutes until deep golden and it sounds hollow when tapped, tenting with foil if the decorations brown too quickly.
  7. Cool before slicing; korovai is traditionally shared at Ukrainian weddings as a symbol of prosperity.
