Ingredients

  • 250 g Milk, whole
  • 15 g Kefir

Method

  1. Pour the milk into an ovenproof dish and bake, uncovered, at 95-100 C (200-212 F) for 3-4 hours, stirring occasionally, until it turns a rich creamy tan colour and reduces slightly.
  2. Cool the baked milk to lukewarm, about 40 C (104 F).
  3. Whisk in the kefir as a starter culture, then cover the dish loosely.
  4. Leave at a warm room temperature for 6-8 hours, or until thickened and pleasantly tangy.
  5. Chill for at least 2 hours before serving cold; ryazhenka is drunk on its own or used like a tangy cultured milk in cooking.
