Ingredients

  • 250 g Milk, whole
  • 20 g Sour cream

Method

  1. Pour the milk into an ovenproof dish, traditionally a clay pot, and bake at 90-95 C (195-200 F) for 2-3 hours until it turns pale golden and reduces slightly.
  2. Cool the baked milk to lukewarm, about 40 C (104 F).
  3. Whisk in the sour cream as a starter culture, then cover loosely.
  4. Leave at a warm room temperature for 8-10 hours, or until set into a thick, custardy curd.
  5. Chill for at least 2 hours before serving cold, spooned rather than poured, as varenets sets thicker than a typical drinking yogurt.
