- Preparation: 30 min
- Cooking: 25 min
- Makes: 1 serving (154 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: alcohol, dairy, egg, gluten
Ingredients
- 25 g Puff pastry
- 70 g Milk, whole
- 10 g Cornstarch
- 15 g Sugar
- 10 g Egg yolks, raw
- 0.5 g Vanilla extract
- 5 g Butter, unsalted
- 15 g Sugar, powdered

- Heat the rest of the milk until steaming, then pour it into the cornstarch mixture, whisking constantly, and return it all to the pan.
- Cook over medium heat, stirring constantly, until the custard boils and thickens heavily, about 3-4 minutes.
- Off the heat, stir in the butter and vanilla, then spread the hot custard over one sheet of pastry and top with the second sheet.
- Chill for at least 2 hours until the custard is firmly set.
- Mix the powdered sugar with the water to a thick icing, spread over the top, and cut into a neat slice once set.
- Makes 1 slice; multiply everything by 12 for a full tray.
