  • Makes: 1 serving (42 g)
  • Difficulty: Easy

  • Contains: dairy, sulphite

Ingredients

  • 8 g Rice, white, long-grain
  • 8 g Coconut, desiccated
  • 5 g Milk powder, whole
  • 8 g Sugar, powdered

  • 4 g Raisins, golden
  • 3 g Candied fruit

Method

  1. Melt the coconut oil gently in a saucepan over low heat.
  2. In a bowl, mix the dry white rice — it stands in for puffed rice cereal (Rice Bubbles), which isn't a plain catalog ingredient — with the desiccated coconut, milk powder and powdered sugar.
  3. Stir in the golden raisins (sultanas) and chopped candied fruit (in place of glacé cherries).
  4. Pour over the melted coconut oil and stir well until everything is coated.
  5. Press into a small lined tray or mould and chill for at least 2 hours until firm.
  6. Cut into a neat piece to serve.
  7. Makes 1 piece; multiply everything by 24 and press into a slab tin for a full batch.
