- Preparation: 15 min
- Cooking: 90 min
- Makes: 1 serving (711 g)
- Difficulty: Medium
- Diets: High protein
- Contains: dairy, gluten, pork
Ingredients
- 120 g Ham hock, smoked
- 60 g Watercress, raw
- 100 g Potatoes, raw
- 80 g Sweet potato, raw
- 20 g Onions, raw
- 300 g Water
- 20 g Flour, all-purpose
- 0.5 g Baking powder
- 10 g Milk, whole
- 0.3 g Salt
Method
- Put a small smoked ham hock (about 400 g bone-in, to yield roughly 120 g of meat) in a large pot with the water and onion; bring to the boil, then skim off any froth.
- Cover and simmer gently for 1 hour, until the meat is tender and starting to fall from the bone.
- Lift out the ham hock, pull the meat off the bone in chunks, and return the meat to the pot; discard the bone.
- Add the potato and kumara (sweet potato) and simmer for 15 minutes.
- Mix the flour, baking powder and milk to a soft dough for the doughboys (dumplings), and drop spoonfuls into the simmering pot.
- Add the watercress and simmer for a final 8-10 minutes, until the doughboys are cooked through and the greens are tender.
- Season with the salt to taste and serve hot in bowls.
