  • Preparation: 260 min
  • Cooking: 5 min
  • Makes: 1 serving (90.5 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy, egg

Ingredients

  • 70 g Ice cream, vanilla
  • 15 g Sugar
  • 5 g Cane syrup
  • 0.5 g Baking soda

Method

  1. Melt the sugar and golden syrup (cane syrup) together in a small pot over medium heat until it turns a deep amber, about 4-5 minutes.
  2. Remove from the heat and quickly whisk in the baking soda — it will foam up into light honeycomb toffee.
  3. Pour onto baking paper and leave to cool and set hard, about 20 minutes, then break into small pieces.
  4. Soften the vanilla ice cream slightly at room temperature, just enough to stir.
  5. Fold the honeycomb pieces through the ice cream.
  6. Return to the freezer for at least 4 hours to firm up again before scooping.
