  • Preparation: 15 min
  • Cooking: 40 min
  • Makes: 1 serving (201 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 10 g Butter, unsalted
  • 30 g Sugar
  • 25 g Eggs, whole, raw
  • 15 g Flour, all-purpose
  • 60 g Milk, whole
  • 20 g Lemon juice
  • 1 g Lemon zest
  • 40 g Water

Method

  1. Heat the oven to 180 °C (350 °F) and butter a small ovenproof dish; set it in a larger baking dish.
  2. Beat the butter with two-thirds of the sugar until light, then beat in the egg and lemon zest.
  3. Fold in the flour, then gradually stir in the milk and lemon juice — the batter will look thin and curdled, which is normal.
  4. Pour into the buttered dish.
  5. Dissolve the remaining sugar in the boiling water and pour gently over the batter, without stirring.
  6. Pour hot water into the outer dish to come halfway up the sides (a water bath) and bake for 35-40 minutes until the top is golden and springy.
  7. Serve warm — it separates into a light sponge on top and a tangy lemon sauce underneath.
  8. This is 1 individual pudding; multiply everything by 4 and bake in one larger dish for a family-size pudding.
