  • Preparation: 80 min
  • Makes: 1 serving (40 g)
  • Difficulty: Easy
  • Contains: dairy, gelatin, gluten, honey

Ingredients

  • 15 g Graham crackers
  • 10 g Marshmallows
  • 6 g Butter, unsalted
  • 5 g Sweetened condensed milk
  • 4 g Coconut, desiccated

Method

  1. Crush the graham crackers — they stand in for malt biscuits, which aren't a plain catalog ingredient — into coarse crumbs.
  2. Snip the marshmallows into small pieces (in place of chewy fruit lollies such as Eskimos).
  3. Melt the butter and condensed milk together gently in a pot, then stir in the crushed crackers and marshmallow pieces.
  4. Shape into a log on a sheet of baking paper and roll up tightly.
  5. Roll the log in the desiccated coconut to coat, then chill for at least an hour until firm.
  6. Slice to serve.
  7. Makes 1 slice; multiply everything by 12 and roll a longer log for a full batch.
