  • Cooking: 60 min
  • Makes: 1 serving (138 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free
  • Contains: alcohol, dairy, egg

Ingredients

  • 30 g Egg whites, raw
  • 30 g Sugar
  • 1.5 g Cornstarch
  • 1 g Vinegar, white
  • 0.3 g Vanilla extract
  • 25 g Cream, heavy
  • 20 g Kiwifruit, raw
  • 10 g Passion fruit, raw
  • 20 g Strawberries, raw

Method

  1. Heat the oven to 120 °C (250 °F) and draw a circle on a sheet of baking paper as a guide.
  2. Whisk the egg white to stiff peaks, then add the sugar a spoonful at a time, whisking well after each addition, until thick and glossy.
  3. Whisk in the cornstarch, vinegar and vanilla just until combined.
  4. Pile onto the baking paper within the circle, smoothing the sides and slightly hollowing the top.
  5. Bake for 60 minutes, then turn off the oven and let the pavlova cool inside with the door closed for at least an hour.
  6. Whip the cream to soft peaks and spread over the cooled pavlova.
  7. Top with the sliced kiwifruit, strawberries and passion fruit pulp just before serving.
  8. This is one wedge, an eighth of a 20 cm pavlova; multiply everything by 8 to make a whole pavlova.
