  • Makes: 1 serving (92.9 g)
  • Difficulty: Hard
  • Diets: Vegan, Dairy-free
  • Contains: gluten

Ingredients

  • 20 g Potatoes, raw
  • 50 g Flour, all-purpose
  • 2 g Sugar
  • 0.6 g Salt
  • 0.3 g Baking soda
  • 20 g Water

Method

  1. Start the potato bug (starter) 3-5 days ahead: boil the potato until soft, mash it with a little of the flour, the sugar and the water, then leave covered at room temperature, stirring daily, until bubbly and sour-smelling.
  2. To bake, mix the bubbly potato bug with the rest of the flour, salt and enough extra water to make a soft dough.
  3. Knead for 5 minutes, shape into a round loaf, and place in a floured, lined tin or basket.
  4. Cover and leave in a warm place for about 3 hours, until noticeably risen.
  5. Heat the oven to 200 °C (400 °F). Sprinkle the baking soda over the top of the loaf just before baking.
  6. Bake for 40-45 minutes until deep golden and it sounds hollow when tapped underneath.
  7. Cool before slicing.
  8. This is 1 slice, about a tenth of a loaf; multiply the dough by 10 for a whole loaf.
