Ingredients

  • 90 g Flour, all-purpose
  • 45 g Water
  • 110 g Lamb, ground, raw
  • 60 g Onions, raw
  • 5 g Garlic, raw
  • 1 g Cumin
  • 0.5 g Black pepper
  • 80 g Tomato puree

Method

  1. Knead the flour, water and a little of the salt into a firm dough; cover and rest 30 minutes, then roll thin and cut into 8 cm squares.

  3. Arrange the dumplings in a lightly oiled steamer basket and steam over boiling water 25-30 minutes until the lamb is cooked through and the dough is tender.
  4. Meanwhile boil the split peas 20 minutes until soft, then simmer with the remaining onion, garlic, tomato puree and oil for the topping sauce.
  5. Whisk the yogurt with the remaining salt.
  6. Plate the dumplings, spoon over the yogurt then the tomato-split pea sauce, and finish with a sprinkle of dried mint.
